Seafood Pastilla

 Seafood Pastilla



Ingredients:

  • 250 g small pastilla sheets
  • 300 g peeled shrimp
  • 300 g squid, cut into squares
  • 300 g white fish, cut into pieces
  • 100 g rice vermicelli
  • 80 g pitted green olives, chopped
  • 1/4 preserved lemon, chopped
  • 150 g chopped white mushrooms
  • 100 g melted butter
  • Juice of half a lemon
  • 5 cl olive oil
  • 1 clove of garlic, minced
  • 1 onion, minced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 teaspoons harissa (spicy chili paste)
  • 2 tablespoons chopped cilantro and parsley
  • 1 egg

Method:

  1. In a pan over high heat, sauté the shrimp and squid in 3 tablespoons of butter for 2 to 3 minutes, then set aside in a bowl.
  2. Sauté the white fish in 2 tablespoons of butter for 2 to 3 minutes over high heat.
  3. In another pan, heat the olive oil and sauté the onion, garlic, mushrooms, harissa, green olives, and spices for 5 minutes over medium heat. During cooking, add the preserved lemon, parsley, and cilantro.
  4. Soak the rice vermicelli in hot water for 5 minutes, then drain and cut them.
  5. In a large bowl, gently mix the white fish with the seafood, vermicelli, and mushroom-onion mixture. Add the lemon juice and adjust the seasoning.
  6. Divide the filling into four equal portions. Grease a small round mold with butter, line it with a pastilla sheet, brush the sheet with butter, and cover with another sheet.
  7. Place a portion of the filling on the pastilla sheet, fold the edges of the two sheets around the filling, and brush with butter and egg.
  8. Place the pastilla on a buttered baking sheet (with the folded side down). Repeat the process until all the ingredients are used.
  9. Bake in the oven until golden brown and crispy.
