Moroccan Balboula Soup 


Ingredients:

  • 2 cups barley (balboula)
  • Salt to taste
  • 1 teaspoon cumin
  • 1.5 liters water
  • 2 cups milk
  • Olive oil
  • 1 grated onion

Preparation Method:

  1. Step One: In a deep pot, add water and heat until it becomes hot. Then add the grated onion, salt, cumin, and olive oil.

  2. Step Two: When the water starts to boil, add the barley (balboula) after cleaning it from impurities.

  3. Step Three: Let the pot simmer on low heat for about 30 minutes, stirring occasionally.

  4. Step Four: Once all the ingredients are cooked, give it a final stir before turning off the heat. Serve the soup in bowls, and you can also add a little thyme on top if desired.
