 Moroccan Tkalya



Ingredients:

  • 3 onions
  • 1/2 cup olives
  • 1/4 cup olive oil
  • 3 cloves garlic
  • 2 tablespoons tomato paste
  • 1 preserved lemon
  • 1 tablespoon cilantro and parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ginger
  • 1 teaspoon cumin

Method of Preparation:

  • First and foremost, boil the tripe and other offal in water to remove the unpleasant odor.
  • Place the offal in a cooking pot and add the onions, garlic, olive oil, cilantro, and parsley.
  • Add all the spices and cook over medium heat for 30 minutes.
  • Add the tomato paste and cook for another 15 minutes or until fully cooked.
  • Serve the dish garnished with olives and lemon slices.
