Moroccan Tkalya
Ingredients:
- 3 onions
- 1/2 cup olives
- 1/4 cup olive oil
- 3 cloves garlic
- 2 tablespoons tomato paste
- 1 preserved lemon
- 1 tablespoon cilantro and parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ginger
- 1 teaspoon cumin
Method of Preparation:
- First and foremost, boil the tripe and other offal in water to remove the unpleasant odor.
- Place the offal in a cooking pot and add the onions, garlic, olive oil, cilantro, and parsley.
- Add all the spices and cook over medium heat for 30 minutes.
- Add the tomato paste and cook for another 15 minutes or until fully cooked.
- Serve the dish garnished with olives and lemon slices.
