 Moroccan Fava Beans with Charmoula


Ingredients:

  • 1 pound fresh fava beans (weighed with the skin)
  • 1 tomato, grated
  • 1/3 cup finely chopped cilantro
  • 1/3 cup olive oil
  • 3 garlic cloves, crushed
  • ½ teaspoon salt, to taste
  • Black pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon tomato paste
  • Preserved lemon 🍋
  • Water

Directions:

  1. Cook the Fava Beans: Place the fava beans in a pot and cover them with fresh water by about 1 inch. Bring to a boil, then lower the heat and simmer until tender, about 30 minutes.

  2. Prepare the Sauce: In another pot over medium heat, combine the grated tomato, chopped cilantro, olive oil, crushed garlic, salt, pepper, paprika, cumin, and tomato paste. Add ¼ cup of hot water and the cooked fava beans.

  3. Simmer and Reduce: Continue cooking on medium heat until the sauce has reduced to your desired consistency.

  4. Serve: You can serve this dish either cold or warm. Enjoy! 😉
