Moroccan Fava Beans with Charmoula
Ingredients:
- 1 pound fresh fava beans (weighed with the skin)
- 1 tomato, grated
- 1/3 cup finely chopped cilantro
- 1/3 cup olive oil
- 3 garlic cloves, crushed
- ½ teaspoon salt, to taste
- Black pepper, to taste
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon tomato paste
- Preserved lemon 🍋
- Water
Directions:
Cook the Fava Beans: Place the fava beans in a pot and cover them with fresh water by about 1 inch. Bring to a boil, then lower the heat and simmer until tender, about 30 minutes.
Prepare the Sauce: In another pot over medium heat, combine the grated tomato, chopped cilantro, olive oil, crushed garlic, salt, pepper, paprika, cumin, and tomato paste. Add ¼ cup of hot water and the cooked fava beans.
Simmer and Reduce: Continue cooking on medium heat until the sauce has reduced to your desired consistency.
Serve: You can serve this dish either cold or warm. Enjoy! 😉
