Moroccan Couscous with Seven Vegetables

Ingredients:
- 1 kg beef
- 1 kg medium-grain semolina (couscous)
- 5 carrots
- 5 turnips
- A small amount of chickpeas and fava beans
- Cabbage
- Zucchini
- Butternut squash
- Eggplant
- A bunch of parsley
- Tomato
- Onion
- Clarified butter
Steps:
- Take the couscous pot and place the meat inside. Add the onion, tomato, and spices (turmeric, black pepper, ginger, salt) and some oil.
- Place the pot on the stove, stirring until the ingredients are browned, then add a large amount of water and bring it to a boil.
- Add the vegetables (carrots, turnips, cabbage, chickpeas, and fava beans) to the pot. Set aside the remaining vegetables until the initial ones are slightly cooked.
- Take the semolina and add a small amount of water, setting it aside to absorb the water. Then, separate the grains with some oil, place it in the couscous steamer, and let it steam well. Afterward, transfer it to a large bowl, sprinkle it with water to absorb, and add a little salt.
- Meanwhile, add the remaining vegetables to the pot along with a grated tomato and some hot pepper.
- Separate the semolina grains with a little olive oil and place it back in the couscous steamer for a second steaming. Cover with a lid.
- In the final stage, add some clarified butter to the semolina. Then, transfer the semolina to a large bowl or dish and pour the broth over it.
